Thought I would check in and say hello and write a quick post as I have not done much blogging these past few weeks. Sometimes your energies are needed elsewhere and it’s not always possible to keep up with everything… unless of course you are super women.
I hope you all had a wonderful Christmas Day as we did and those that celebrate the festive occasion are probably enjoying some of the leftovers. One of my favorite ways of using leftover Christmas pudding is to make this quick Christmas pudding ice cream. I have made this many times and it never fails to please.
Today I will make a big pot of stock with the leftover turkey carcass to make a flavorsome vegetable soup and the remaining stock I will freeze.
In our house we are not fond of re-heated turkey and any leftover meat is sliced and used for sandwiches with cranberry sauce and stuffing or served with a salad such as this spinach, date, orange, pomegranate and feta cheese salad with a citrus dressing.

That soup looks so good. That is what a need- a nourishing bowl of vegetable soup.
With all the rich food eaten these past few days, a bowl of soup is very welcoming 🙂
Hi Moya, Happy New year to you toooo. Yesterday, I broke up the turkey and froze meal size portions. One day soon when I don’t feel like cooking I won’t mind that it is left over.
