Marinades are a great way to tenderize and flavor food before cooking and with some ingredients most likely in your store cupboard, you can transform the taste of food and make it more interesting. Honey, mustard and soy makes a delicious sweet-salty marinade and is one of our favorites and, takes minutes to prepare.
I like using skinless, bone in chicken thighs for this recipe but you could leave the skin on if you wish or use drumsticks. I usually marinate the chicken in the morning (turning at least once in the marinade) if barbecuing in the evening. Make sure your barbecue is pre-heated so you get a nice char-grilled flavor and half-way through cooking, brush the food with some of the marinade that’s left in the dish. You can also use this recipe for marinating salmon fillets, but only marinate the fish for about 30 minutes before cooking.

(makes about 125ml)
3 tablespoons honey
3 tablespoons low salt soy sauce
2 tablespoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon olive oil
3 garlic cloves, peeled and crushed
a few twists of freshly ground black pepper
How to make:
In a small bowl add the honey, soy and mustard. With a small whisk or fork, whisk the ingredients together until smooth. Add the lemon juice, olive oil, garlic and black pepper, whisk again. Use with chicken or salmon.
