Cardamom Honey Butter

Can you believe we are almost through the first month of the year. And like last year, I intend making better use of my cookbook collection. Are you like me and have cookbooks you haven’t ever made one recipe from? Helping with that is my monthly Instagram ingredient challenge which finds me searching through my cookbook collection for recipes. 

As the ingredient this month was honey, choose the recipe from a lovely cookbook called Yogurt Culture. Although the honey butter flavored with cardamom is made to serve with warm homely flatbreads, thought I would only post the recipe for the cardamom honey butter as it is so very simple to make and would also taste wonderful spread on home baked breads, toast, pancakes and scones. The flatbreads were delicious too and made with plain and whole-wheat flour, yoghurt, honey, chopped golden raisins and poppy seeds.

 

The honey butter recipe also reminded me of a lovely time spent in the gorgeous village of Alacati in Turkey some years back which inspired me to make another flavored butter, with lavender and honeycomb, which also is very lovely.

Cardamom Honey Butter

Recipe adapted from the cookbook Yoghurt Culture by Cheryl Sternman Rule

Ingredients:
110g unsalted butter, softened
1 tablespoons honey
1/4 teaspoon ground cardamon
pinch of sea salt

How to make:

Add the butter, honey, cardamon and salt into a small bowl. With a wooden spoon, beat all the ingredients together until smooth. 

Place the flavored butter into a suitable container and store in the refrigerator until needed. Bring the flavored butter to room temperature before using.
