I too am aware of the global uncertainty and turmoil affecting our society and acknowledge, change is surrounding us all, whether we like it or not. Meantime, a little escapism is good for the soul, whether you find it in reading, watching a movie, exercise, cooking or chatting with a good friend…of course you know this list is not confined solely to theses activities. Rummaging through the cookbook section in a UK bookstore was my first introduction to Whoopie pies. And while cupcakes were all the rage, thought these whoopie pies were a novel idea. So, bought Claire Ptak @violetcakeslondon “The Whoopie Pie Cookbook. This was probably nine or ten years ago and shortly after, found whoopie pie tins (with recipe leaflet) to bake them in. So between the cookbook, recipe leaflet and preserves from @mrsbridges_food these are my recipe inspired Scottish Blackcurrant Bakewell Whoopie Pies, made for the #foodandtoolsUseYourCookbookClub I had forgotten how lovely these sweet treats are and with the whoopie pie cookbook, plenty of flavors and variations. Why I stopped making them? I really can’t remember, but happy to do so after a long time.

Thank you Fifi @hungry_fifi for choosing GRAPEFRUIT for this months ingredient challenge and finally getting the push needed to make this Citrus Salad with White Chocolate Dressing for the #FoodAndToolsUseYourCookBookClub The salad itself might all sound a little odd but it truly did not disappoint with the contrasting flavors of zingy citrus and the smooth white chocolate dressing. "Unusual and and delicious”, words taken from the recipe headnote, and I couldn’t agree more.
