Homemade Almond Milk

home made almond milk-9405These days I am making more homemade almond milk than ever, hubby and daughter are training hard for our first Bahrain Challenge, a triathlon coming up on the 6th of December. Although we have no lactose intolerant or vegans in the house and we are not pushing out dairy products, almond milk is another option to replace dairy milk when needed. A basic homemade almond milk has two ingredients, water and raw almonds, you can add sweeteners and flavorings but I tend to leave those out as we are not always using the almond milk for the same purpose. I do like to add a pinch of sea salt to enhance the flavor when making. Not a fan of almond milk in my tea or coffee but use almond milk (or coconut milk) with some recipes when baking and cooking, and of course in smoothies and porridge. Peach Compote or Kompot A Refreshing Fruit Drink

Peach Kompot-7121A recent trip and talking food and drink with some Romanian ladies, inspired  this Eastern European fruit drink known as compote or kompot. Mothers and grandmothers would make this much-loved refreshing fruit drink at home, made with fruit, sugar and water. With lots of fresh peaches in my kitchen, some were grilled and added to a tasty quinoa and chicken salad and the rest used to make this Peach Compote… for drinking. Mango Lassi with Bee Pollen |Healthy Summer CoolersThe temperature outside is rising and with a bit of mango mania going on in the kitchen, thirst quenching yoghurt based drinks like this mango lassi with bee pollen are on the drinks list. Now I know bee pollen is not your typical ingredient found in a sweet lassi, but adding extra health boosting ingredients like seeds, nuts, berries, oatmeal etc., are quick and simple ways of increasing the nutritional content of your favorite drink.

Touted as a super-food, I had never bought bee pollen (granules) until recently. Probably one of the reasons that kept me so long from trying bee pollen is written on packet labels… “this product may cause severe allergic reaction”. Do not take this warning lightly, I have experienced an acute anaphylactic shock (nothing to do with bees) and it’s a very frightening  experience and one I would not wish on anyone.
