Easy I Sleigh Cocktail: Tropical Drink for Any Occasion

Halfway through the first month of this new year and I do hope it’s gotten off to a good start. Although I am not one for making new year resolutions, I do hope to rekindle my enthusiasm for blogging once again and maybe not always a post with a recipe. Still figuring out how I plan on approaching this but as they say…you have to start somewhere! 

So with an easy and delicious cocktail I begin…for as long as I can remember I’ve been a fan of cocktails and in my younger years acquired a few basic bar essentials. I still have the same stainless steel cocktail shaker and my first ever cocktail book was, “Cocktail and Party Drinks” published by Octopus Books in the early nineteen eighties. And if memory serves me correct, I found it in a small bookshop at the Oberoi hotel in Mumbai (it was called Bombay back then) which I visited on my stopovers as a stewardess. 

I enjoy a cocktail or two when dining out but my holiday favorite by a pool or beach is a classic pina colada. And with a little nod to my forty year old and not so shabby cocktail shaker that has shaken many a concoction over the years…cheers to a light and refreshing “I Sleigh” cocktail and a fabulous 2025. The drinks recipe below was Inspired by “Free Spirit Cocktails” by Camille Wilson.

I Sleigh

(Serves One)

Ingredients:

  • 30ml coconut cream
  • 60ml coconut water
  • 25ml ginger syrup
  • 25ml fresh lime juice 
  • 50ml Malibu, (coconut rum liquor), (optional)
  • ice cubes

Garnish:

sugared or plain cranberries 

How to make:

Pour the measured coconut cream, coconut water, ginger syrup, fresh lime juice and Malibu (if using) into a cocktail shaker along with a few ice cubes. Shake all ingredients together until chilled. Pour into a coupe glass and garnish with a cranberry. 

Note: You can easily double the cocktail recipe for two servings, speeds things up if serving a few. This cocktail is equally delicious without the optional alcohol so making it a lovely mocktail.
