The Bowl Built To Last: With Mum’s Bread Stuffing Recipe

My kitchen is equipped with many types and sizes of mixing bowls but one that stands out, is the oldest. This large bowl is bright red, nothing modern or decorative…just plain ordinary.

I remember buying this plastic bowl in a shop called “Habitat” at the local souk. I had just moved to Bahrain from Ireland, that was four decades ago! Back then red and white kitchen accessories were stylish and although that trend faded…this red bowl hasn’t and remains in my kitchen today.

The words “THE WORKING KITCHEN” are stamped on the underside of the bowl. A search on google showed the bowl was made in the UK in the 1970’s, by Crayonne Ltd. The company’s range of kitchen items were known for their vibrant colors and durability. This vintage mixing bowl is testament to that quality.

Over that last forty years and in this bowl, I’ve mixed everything from salads to cakes, batters and bread recipes. Large and lightweight, this bowl is an essential part of my kitchen equipment that holds countless kitchen memories too.

It isn’t just a sentimental piece, it’s also perfect for mixing up Mum’s homemade bread stuffing. And I remember, every Christmas eve Mum would make the biggest bowl full of stuffing. She would then leave it in the pantry overnight, in preparation for stuffing the turkey on Christmas morning. This yearly ritual gave me the opportunity to head to the pantry and take a few sneaky spoonfuls without ever getting caught.

A chicken or turkey roast wouldn’t be as enjoyable if there wasn’t any of Mum’s homemade stuffing inside. It’s the recipe we grew up with and the same one I make for my family too.  

An easy to make bread stuffing, needing only a few simple ingredients. Mum says, the secret ingredients is the stock cube.

   

Mum’s Homemade Bread Stuffing

Ingredients:

  • 100g butter
  • 150g chopped onion
  • 1/4 piece of a chicken stock cube
  • 250g white breadcrumbs, (use day-old bread)
  • 50g chopped fresh parsley
  • 1/4 teaspoon of fresh chopped thyme
  • sea salt, to season  
  • a few twists of freshly ground black pepper

How to make:

Add the butter into a small saucepan and melt over low heat. Add the onion and stock cube. Cook the onion on low heat for about 5 to 6 minutes or, until soft. Remove the saucepan from the heat and set aside.

Add the breadcrumbs, parsley and thyme to a large mixing bowl. Mix together using a wooden spoon. Pour over the butter and onion mixture and mix thoroughly. Season with salt to taste. Add a few twists of ground black pepper.

Note: When making breadcrumbs I like including the crusts of bread if they are soft. Double this recipe if you are stuffing a turkey.

  1. Like you, I have items in my kitchen that evoke fabulous memories of places, family, friends, events, etc. My mother made one similar and a roast chicken is not the same unless stuffed with her bread stuffing. Thank you so much for the memories. 💕🍞🍗
