Swedish Style Prawn Sandwich

A good sandwich is hard to beat, either open-faced or with the tasty filling sandwiched between two slices of bread. And, the combinations of toppings and fillings are endless. You have a wonderful variety of bread too, brown, white, sourdough, rye, multi-grain, gluten-free, etc. Then you have the option of having certain sandwiches toasted or left plain. It really is a matter of preference, but one thing certain…you know when a tasty sandwich ticks all the boxes.

Easy I Sleigh Cocktail: Tropical Drink for Any Occasion

Halfway through the first month of this new year and I do hope it’s gotten off to a good start. Although I am not one for making new year resolutions, I do hope to rekindle my enthusiasm for blogging once again and maybe not always a post with a recipe. Still figuring out how I plan on approaching this but as they say…you have to start somewhere!

Scones with Lemon Zest and Rosella Jam

If you ever studied home economics at school and lived in Ireland, you will have made a basic scone recipe. Scones are quick to make with ingredients you’re likely to have in your kitchen. Nothing beats the taste and enjoyment of a freshly baked scone, generously spread with a layer of clotted cream or butter and your favorite jam. I specifically kept my small batch of home-made rosella jam for serving with these scones which were perfect together. And in keeping with the lemony cranberry taste of rosella jam, added the zest of a lemon to the scone mixture.
