I do hope the new year 2021 has started well for you all, despite grim news on this continuing pandemic. Rummaging through the cookbook section in a UK bookstore was my first introduction to Whoopie pies. And while cupcakes were all the rage, thought these whoopie pies were a novel idea. So, bought Claire Ptak @violetcakeslondon “The Whoopie Pie Cookbook. This was probably nine or ten years ago and shortly after, found whoopie pie tins (with recipe leaflet) to bake them in. So between the cookbook, recipe leaflet and preserves from @mrsbridges_food these are my recipe inspired Scottish Blackcurrant Bakewell Whoopie Pies, made for the #foodandtoolsUseYourCookbookClub I had forgotten how lovely these sweet treats are and with the whoopie pie cookbook, plenty of flavors and variations. Why I stopped making them? I really can’t remember, but happy to do so after a long time.
