It’s hard to beat a simple cheese toasty. Years ago I had an electric sandwich toaster which stopped working and I never replaced it. Afterwards I used the electric grill to make grilled sandwiches and panini. About a year ago I came across these sturdy non-stick toaster bags from Lakeland which are so handy for making toasted sandwiches. All you do is, prepare your favorite cheese sandwich with some added tasty fillings, put the sandwich into the toaster bag and place into the toaster… a few minutes later your perfectly melted, golden brown cheese toasty is ready to enjoy. Hummus Topped with Lamb, Pine Nuts and Pomegranate Molasses
Hummus is filling, deliciously tasty and so easy to make at home. Perfect for eating as a snack with some warm home-baked flatbread, used as a spread for sandwiches or served with grills, barbecued meats or chicken. We all love hummus in our family and we sometimes love to top hummus with minced lamb cooked with sweet spices and pine nuts, then garnish the dish with a drizzle of pomegranate molasses and olive oil, this is one of our favourite mezze dishes when dining at a Lebanese restaurant.
With the help of a food processor/blender it only takes a couple of minutes to make up a bowlful of hummus… it’s the soaking and cooking of dried chickpeas that takes time. Canned chickpeas are a handy store cupboard ingredient when you don’t have the time to use dried chickpeas or can’t be bothered. One-Pot Braised Chicken with Tomatoes, Potatoes and Herbs
We are definitely feeling the cold in Bahrain at the moment and although our winters are short-lived, it is a welcoming change from our searing hot summers. Outdoors we can wear our winter woolies and indoors it is a good time to put the casserole pot to good use and cook piping hot hearty oven-to-table family meals. What I love about one-pot meals, they can be as simple as this Braised Chicken with Tomatoes, Potatoes and Herbs or more elaborate, like Beef Bourguignon. This fuss free one-pot meal takes little time to prepare and as the dish is completely cooked in the casserole pot, there is hardly any washing-up to do.
