Recently I caved in and bought a spiralizer, with different graters and julienne peelers already in my kitchen, I really didn’t think I needed another gadget. It was my daughter who really wanted one and I have to say, do love using it. You can use a julienne peeler to make ribbons too, but you wont get that spaghetti look. Continue reading

Green Beans and Freekeh Salad with Tahini Sauce
Freekeh (pronounced freak-uh) is a healthy whole grain food and is young green wheat that goes through a process of roasting, is then cracked or left whole. Really love the smokey flavor and nutty texture of freekeh and like other grains, perfect in salads. Freekeh is high in fiber, protein and iron and has become another favorite in our kitchen and we love this salad of green beans and freekeh with tahini.
Beetroot with Yoghurt and Fresh Thyme
I can’t ever remember a time when I didn’t like beetroot, even as a child. Growing up in Ireland and when eating out, I seem to remember that every egg salad or salad for that matter, had some form of beetroot on the side.
