Winter has visited us and although we do not have the bitterly cold temperatures felt in other parts of the world… we do feel the cold. Our winters are short and the season only lasts a few weeks but is a welcome change from our hotter months.
This warming dish above is a slight variation on the vegan butternut nut squash and chickpea stew recipe previously posted. Sometimes I like to add four or five chicken fillets (thickly sliced), use chicken stock, omit the baby sweetcorn and dried lime. Either way the dish is wholesome, warming and a great one-pot family meal.
I hope to get back into the swing of posting recipes, it’s not that I haven’t been cooking, but the time it takes (at least for me) to cook, style, photograph and write the recipe and blog post is not something that I’ve been able to accomplish in an hour or two… hats of to those of you who can. But I still love to keep this blog going even if it has slowed down somewhat, it is my little creative outlet and I need to get my mojo back 🙂
